Yesterday I decided I would try making a pizza with wraps. I have seen so many people doing this and thought it was about time I tried it. I was plesantly surprised! It was yummy!
I started by putting a very thin layer of tomato pasta sauce on a wrap and then putting a second wrap on top. I thought a slightly thicker base would be nicer and the little tomato sauce stuck the two wraps together. Then I topped the second wrap with more tomato sauce, shallots, cherry tomatoes, vegan feta, salt, pepper, dried basil, parsley and oregano and cooked in the oven for about 10 mins till cheese had melted and the wrap looked crispy. Finally I topped it with fresh basil and a drizzle of balsamic. It really was rather tasty and I shall definitely be making this again! Its so quick and easy!! And filling!!

Yesterday my sister came down from Edinburgh for the day and so I had the whole family over for dinner at my new place, which was really nice!
I love cooking for people and so I had great fun making a three course vegan meal for my family.
For starters I made an avocado dip which we ate with a yummy toasted organic white loaf, topped with tomatoes.
Mains was a kinda curry using all my leftover veg such as carrots and bean sprouts. The curry wasn’t spicy as my mum can’t eat spice, however my sister, dad and myself sprinkled it with some chilli flakes which gave it a nice bite of heat.
And for dessert we had a scoop of Alpro hazelnut and chocolate ice cream with warm berries – mmm!
I love having my own place and I’ve really settled in now. It was so nice having the family over! Catching up together and playing a game with dessert. Codenames by the way is an absolutely brilliant game and I urge you all to get your hands on it!
Oh and I know it’s random but I spotted my first ladybird today! It put a smile on my face so I thought I’d share hence the seemingly irrelevant cover photo!

I just wanted to give you a mini update on my vegan and no booze month:
Day 1 = Fail!
I had some dairy, but to be fair it was unintentional! For my dinner I had some pesto that needed using, and before you say pesto isn’t vegan, it was a free from pesto with no gluten or dairy products in it. Now I had pasta to eat with it or gnocchi and as I was too lazy to wait 15 mins for the pasta I decided to have the gnocchi, which I also love! However as I was cooking them it dawned on me that I should probably check the label to double check ingredients and that’s when I discovered they had milk proteins in them – oops!
This just made me realise I really am going to have to check everything even if one wouldn’t automatically think certain products would contain milk!
I wonder if vegan gnocchi exist – does anyone know?? Because I adore them! Or maybe I’ll have to try making them myself aha!
Well I’ve learnt my lesson – read all the packaging aha!

Still stuck with no internet at home! eurgh! So only managing weekly posts at the moment whilst at dads cafe before I start my shift.
Before I start this post I also need to admit that I have now been on a plateau for the last two months! shock – horror! Time has just flown by and I started slacking I guess, deluding myself. Anyway I am not proud and I am hoping that the challenge I ma setting myself for the next month will help focus me again and bring me back on track. I have set myself the challenge of going booze free and vegan for 1 month! (so no more pizza and wine for now aha)
I have been toying with the idea of becoming vegan for a while now; definitely for animal cruelty reasons and the environment but also very much so for health reasons. However I can’t lie, I do love the taste of meat and eggs are such a staple part of my diet so how on earth would I manage going fully vegan?!?! As you know I have already cut out most milk products from my life as I believe I am lactose intolerant and for a good month or so I haven’t bought any supermarket mass produced meat anymore but rather quorn, vegetarian sausages or occasionally organic humanely butchered meat from a small local farm. So I have been making some changes already.
Furthermore I have decided I want to give up alcohol for a month too, again for the health benefits. I seem to have formed a habit of having a beer (or sometimes 2 or even 3) after work nearly every day! It’s not healthy and even though i don’t drink to get drunk, 2 pints can still leave me feeling rather groggy the next morning! I am not yet ready to become tea total but I think it would benefit me having a bit of an alcohol detox for now and then afterwards in the long run try to reduce the amount I drink in general and sticking to low alcohol beers for example. This should also help get me off this horrid plateau as I always disregard alcohol calories!
Anyway, so without fully committing myself yet I wanted to do a trial month of veganism and being tea total to really see and feel the health benefits in the hope that there will be drastic positive changes that motivate me to then continue veganism and at least reduce my alcohol intake. As it was my birthday on Thursday I’ve been enjoying celebrating over the weekend and will now be starting this challenge on Monday! So wish me luck! We’ll see how it goes!
